Our culinary haute couture presentation Collection Beige brings the best ingredients of the season to life in specially prepared courses in this final session. The “Winter Collection” that opened on November 2nd will run through the end of the month. Guests can enjoy aromatic white truffles, the best in the world, together with dishes that use abundant seasonal ingredients.
We will serve “Galette des Rois (King Cake),” a New Year’s treat, as a small dessert to all “Beige Alain Ducasse Tokyo” guests at lunch and dinner during the month of January. The guest who finds the fève in his or her cake will win a glass of champagne and chocolate as presents on the spot. And a lottery will be held at the end of the month for those who found fève in their cakes. The winners will receive wonderful prizes.

We are delighted to welcome Chef Sommelier Gerard Margeon, supervisor of wines in all Alain Ducasse establishments around the world. He will share the wines of the moment in an event called “The Secret Cellar”. Nine wines have been selected from Château MONTROSE, classified as one of fifteen Deuxièmes Crus (Second Growths) around the world. Following the lecture on the wine, guests will be served a dinner course prepared just for this event.
The season’s top ingredients are brought together each season in a special course called Collection Beige, the “haute couture” of French cuisine. Due to the wonderful feedback we received from our guests last year, we are delighted to present the collection again in 2016.
It’s happening again this New Year! We will offer La Galette Des Rois as a mignardise for all of our guests during both lunch and dinner. If you find a fève in your treat, you will receive a complimentary glass of champagne with chocolate at the table. Galette des Rois is a popular confection enjoyed in France on the 6th of January each year, to celebrate the Epiphany (Epiphany of Christ). Traditionally, the person who receives the slice of cake containing the hidden fève (porcelain charm) is celebrated as king or queen by the entire party. With the coming of spring, we will be opening our rooftop terrace, Le Jardin de Tweed. Of course, the terrace is always lovely for a beverage, but we also encourage you to enjoy a light meal or dessert along with the blue sky or night view of Tokyo.
Light and hot, our souffé is coming back ! In this season, we prepare Orange Souffé containing the bitter orange marmalade with the citrus fruits sherbet. It is available only in dinner time.
For this event, as much black truffle as your heart desires will be sliced right at your table. These truffles will be sold by the gram at cost. The truffles used at Beige Alain Ducasse Tokyo are produced in the special truffle-producing area in France or Italy.

Galette de Rois is a confection enjoyed in France during the festival of Epiphany falling on January 6. When taking part in this fun tradition, the person who finds the single fève (ceramic trinket) hidden in each cake becomes king or queen for the day.
From the 24th of this month, we will begin serving Château Guiraud Sauternes, a sweet wine from Bordeaux, from Imperial Bottles (six liters bottles) We invite you to try this wine with an appetizer or dessert.
For Christmas this year at Beige Alain Ducasse Tokyo, we will be using the menu for a meal traditionally served on New Year’s Eve at Le Louis XV Alain Ducasse in Monaco, Ducasse’s flagship restaurant and home base for cuisine.

Starting in May with Monaco and continuing in July with Paris, the worldview of Alain Ducasse was portrayed through the various cuisines of each chef. In November, the final stage of the event will be London.

With the abundance of wild game in winter comes our special seasonal dish, prepared with duck. Beige Alain Ducasse Tokyo serves wild duck from Gifu and Niigata, caught via a traditional hunting method with nets. Because they are not subjected to excess stress, the duck is known to be extremely tender. They are delivered to us with each order, promising superb freshness.

Spring has come ! Asparagus is good ! We are offering the finest asparagus that our Executive Chef, Kei Kojima has directly found at a farm in Isehara, Kanagawa prefecture.
This month, I present the scallops which are in the best season. At Beige Alain Ducasse Tokyo, we use the large scallops from Notsuke, in Hokkaido. In the natural environment, they are jostled in the floating ice and grow up well increasing the rich flavor.
